Meal Plan like a champ

I'm a believer in meal planning. It saves headaches and frantic decisions on meals. And it's so nice to know the kitchen is stocked with just what I need to cook a healthy meal for my family. I won't say it's easy to meal plan. I get this new pressure every week when I sit down to plan. A pressure that says I need to be innovative and new each week. Reality is I know what healthy foods my family will eat so I don't need to reinvent the wheel each time. 

What I am learning about meal planning is that it's ok to change up the meal even though it's already written on my weekly calendar. For instance, this delicious pineapple chicken was not in the plan but I had what I needed so I went with it. It's completely fresh and clean! 



I went on a search for this recipe but kept running into ones that called for brown sugar and corn starch so I made up my own. Blending pineapple in my Bitamix creates a puree with natural sugars so no need to add the brown sugar. Throw it all in the crockpot, let it do its thing and then serve on top of rice or quinoa. Simple. Clean. Delish!
